Super Simple Pickled Eggs's

When making pickled eggs you can't go wrong. They are a staple in our house and we have done several different recipes and they have all been fabulous; however this recipe is super simple and quick and they taste great! We like our pickled eggs sour so we recommend a 2/3 ratio Vinegar and 1/3 Water. Your can use what ever Vinegar you want but we recommend a pickling white vinegar for this recipe. Then all you need is fresh dill and salt. Once again any salt works but we prefer Kocher salt.

1) Hard-boil your eggs. We heat a pot of hot water and start a boil, lower your eggs into the pot until fully submerged. Restart your timer for 12 minutes of a slow boil. Then remove your eggs and place in an ice bath for at least 10 minutes. We find this helps separate the egg membrane.

HINT: If using farm fresh eggs male sure they are a few weeks old as they peel easier.

2) Once your eggs have been resting in the ice bath you can start to peel. Peel and wash your eggs and place in a clean jar.

3)Make the brine: mix 2/3 Vinegar with a 1/3 of water and salt in a saucepan and heat until salt is dissolved. I don't give exact measurements as it depends on how many eggs you are doing. however 4 cups vinegar to 3 cups water and half a cup salt does a few small mason jars of eggs.

4) Place hard-boil eggs in clean jar add your fresh dill and dump brine over eggs until jars are filled. Place lid on jar and place eggs in refrigerator and they are great for the nest few months. Perfect snack and proteins for your family!

OPTIONAL: You can also add onions, garlic, pickling spices, black pepper or fresh spicy peppers to your jar. The options are endless however the above recipe is basic, simple and fast and only requires 5 ingredients with your eggs!
